📝 Ingredients

For Chicken:

  • 1 kg chicken (cut into pieces)
  • 1 cup yogurt
  • 2 onions (sliced & fried)
  • 2 tomatoes (chopped)
  • 1 tbsp ginger garlic paste
  • 1 tsp red chili powder
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp salt
  • ½ cup oil

For Rice:

  • 3 cups basmati rice
  • 4–5 cups water
  • 2 bay leaves
  • 4 cloves
  • 2 cardamoms
  • 1 cinnamon stick
  • Salt to taste

For Layering:

  • Fresh coriander
  • Fresh mint leaves
  • 2 green chilies
  • Yellow food color (optional)
  • 2 tbsp milk

👨‍🍳 Instructions

1. Marinate the Chicken

  • Mix chicken with yogurt, ginger garlic paste, spices, and salt.
  • Let it marinate for at least 2–4 hours.

2. Cook the Rice

  • Boil water with whole spices and salt.
  • Add rice and cook until 70% done.
  • Drain and set aside.

3. Prepare Chicken Masala

  • Heat oil in a pot.
  • Add onions and tomatoes, cook until soft.
  • Add marinated chicken and cook until tender and oil separates.

4. Layer the Biryani

  • In a pot, add a layer of chicken.
