📝 Ingredients
For Chicken:
- 1 kg chicken (cut into pieces)
- 1 cup yogurt
- 2 onions (sliced & fried)
- 2 tomatoes (chopped)
- 1 tbsp ginger garlic paste
- 1 tsp red chili powder
- 1 tsp turmeric
- 1 tsp garam masala
- 1 tsp salt
- ½ cup oil
For Rice:
- 3 cups basmati rice
- 4–5 cups water
- 2 bay leaves
- 4 cloves
- 2 cardamoms
- 1 cinnamon stick
- Salt to taste
For Layering:
- Fresh coriander
- Fresh mint leaves
- 2 green chilies
- Yellow food color (optional)
- 2 tbsp milk
👨🍳 Instructions
1. Marinate the Chicken
- Mix chicken with yogurt, ginger garlic paste, spices, and salt.
- Let it marinate for at least 2–4 hours.
2. Cook the Rice
- Boil water with whole spices and salt.
- Add rice and cook until 70% done.
- Drain and set aside.
3. Prepare Chicken Masala
- Heat oil in a pot.
- Add onions and tomatoes, cook until soft.
- Add marinated chicken and cook until tender and oil separates.
4. Layer the Biryani
- In a pot, add a layer of chicken.
- Add a layer of rice on top.
- Sprinkle coriander, mint, green chilies, and food color mixed with milk.
- Repeat layers if needed.
5. Dum Cooking
